5 Simple Meals for the Busy Christian Woman
Ecclesiastes 4:6 (NLT): “Better to have one handful with quietness than two handfuls with hard work and chasing the wind.”
Here are 5 simple meals you can keep on repeat:
1. Sheet Pan Chicken & Veggies
- Toss chopped chicken breast, broccoli, bell peppers, and sweet potatoes in olive oil and seasoning.
- Roast at 400° for 25 minutes.
- Boom. One pan, easy cleanup.
Pro tip: Make extra for tomorrow’s lunch.
2. Greek Yogurt Parfait Bowl
- Plain or vanilla Greek yogurt
- Add berries, granola, chia seeds, and a drizzle of honey
- High-protein, 5 minutes, no stove required!
Perfect for breakfast or a light dinner when you’re short on time.
3. Taco Bowl Night
- Ground turkey or beef with taco seasoning
- Serve over rice or lettuce
- Add black beans, salsa, avocado, cheese
Bonus: Everyone builds their own bowl — no complaints from picky eaters!
4. Egg Scramble + Toast
- Scramble 2 eggs with spinach or leftover veggies
- Serve with whole-grain toast and fruit
- Breakfast for dinner, done in 10 minutes
Sometimes the simplest meals are the most satisfying.
5. Slow Cooker Chicken Salsa
- Place 2–3 chicken breasts in the slow cooker
- Add a jar of salsa + taco seasoning
- Cook on low 6–8 hours, shred and serve in tacos, bowls, or over salad
This is my “set it and forget it” lifesaver for crazy days.
